 The "PR," or Processing Room, is always a busy place right after the boats come in from fishing and just before guests leave for home. In the PR, your catch will be cleaned, filleted, vacuum packed in 1 lb. packages, flash frozen and boxed for transport home. See the Processing Page for more information.
